Some nights the idea of chopping an onion feels like too much. These are the dinners I make on those nights, when cooking at all feels like the harder option compared to cereal for dinner.
Six dinners for nights you cannot cook
1. Quesadillas
Shredded cheese, a tortilla, a hot dry pan. Add whatever protein or beans you already have without dirtying a second pan.
2. Breakfast for dinner
Scrambled eggs and toast take under 10 minutes and use almost nothing you need to plan ahead for.
3. Loaded baked potatoes in the microwave
A potato pierced a few times and microwaved 8 to 10 minutes, split open and loaded with cheese, sour cream, and whatever leftover chili or beans are in the fridge.
4. Pasta with butter, garlic, and parmesan
Save a cup of pasta water before draining. It is what turns butter and cheese into an actual sauce instead of a greasy mess.
5. Grilled cheese and canned tomato soup
A genuinely underrated dinner. Butter the outside of the bread, not the pan, for the most even browning.
6. Frozen dumplings or gyoza
Pan-fried from frozen with a splash of water and a lid for a few minutes gets you crisp bottoms and a cooked-through filling with almost no active effort.
Frequently asked questions
Are these dinners actually filling, or just quick?
Most of them, yes, especially the potato and quesadilla options once loaded with protein. They are meant for low-effort nights, not necessarily low-calorie ones.
Can I keep the ingredients for these on hand all the time?
That is the point. Eggs, tortillas, cheese, and a few cans of soup or beans are worth always having in the house for exactly this kind of night.
